Apple Fritatta(?)
3 red apples
1/3 cup flour
1 cup sugar
1/4 tsp baking powder
1/3 cup mashed banannas
1 egg (unbeaten)
cinnamon and nutmeg to taste
a pinch of rolled oats
Peel and slice apples in a spiral in the bottom of a 10 by 10 inch round ceramic baking dish. This should yield about 2 1/2 layers of apple slices. In a seperate bowl, mix dry ingredients (excepting spices and oats) and add unbeaten egg. Mash with fork until well mixed, then spread mixture over apples.* Mash banannas and spread over top of all. Sprinkle on cinnamon and nutmeg, then oats. Bake at 350 degrees for 15-30 minutes.
* Note: You may want to adjust the ratio of mixture to apples according to personal preference.
